Healthy Fudgy Sweet Potato Brownies

Healthy Fudgy Chocolate Brownies

Ingredients:
-3/4 cup sweet potato
- 1 cup peanut or sunflower butter
- 1 tsp pure vanilla extract
- 6 tbsp oat flour
- 1/2 cup mini chocolate chips
- 6 tbsp cocoa powder
- 1 1/2 tsp baking soda
- 1/8 tsp salt
- muffin tray + silicone patty pans
Method
Preheat to 170°C and line 2 baking sheets with parchment paper.
Bake sweet potato whole on a parchment lined tray for 45mins until soft and tender. When removed from oven allow to cool and peel the skin away from the sweet potato and discard.
In a large bowl, mash the roasted sweet potato with a fork and then add the honey, sunflower butter, vanilla extract and mix together - then gentle fold through your cocoa powder, chocolate chips, baking powers and oat flour together until mixture becomes dough-like in consistency.
Bake for 15-25 minutes until skewer in inserted and comes out clean. Remove the brownies from the oven and set them to cool in a backing rack for 10 minutes. Voila! Your brownies are ready. Serve them right after or store them in an airtight container for up to 1 week.
